UNCLE WILL’S WAFFLES

Wanna start the day out right? Breakfast (the most important meal of the day) should be delicious and healthy. Waffles are fun to eat, and when you think about it, can contain anything and still be a waffle! So why not fill it with healthy things?

As promised, here is my personal waffle recipe (read the whole thing before you go shopping):

EQUIPMENT YOU’LL NEED:

  • A waffle iron (not the Belgian Waffle kind, these are real waffles!)

  • Big bowl to mix in

  • Some newspapers to catch drips & cooking spray mist

INGREDIENTS:

  • 3 cups any combination of any of these pancake mixes: Buckwheat, Oat, Whole Grain or Rice Flour

  • 3 tbsp olive oil

  • 3 egg yolks (separate the whites and save for last)

  • 1 cup halved blackberries (or any other berries you like)

  • 1 cup halved raspberries (or any other berries you like)

  • 1 cup pecans (or walnuts) - skip if you have allergies

  • 2-3 cups unsweetened almond milk - you decide how thick you like it!

  • 2 tsp (aluminum-free) baking powder

  • 3 egg whites

INSTRUCTIONS:

  1. Heat up waffle iron and have some olive oil cooking spray, a ladle and some Ziploc gallon-size freezer bags ready!

  2. Mix together all the ingredients except for the baking powder and egg whites. Make sure the consistency is similar to oatmeal, by adding a little water or a little more flour to get it just right! Once everything’s blended nicely fold in the egg whites and baking powder to make ‘em a little more plump (don’t worry, these are so healthy you won’t get plump!).

  3. Once waffle iron is ready, spray some cooking oil onto top & bottom & ladle in enough batter to cover the middle of the iron. Presto!

  4. Cool off each waffle on the stove top (or cooling rack if you’re a serious TV-style chef!). Have a waffle now with some butter, syrup, honey or whatever you like and freeze the rest for future healthy mornings!

  5. Take a bow - you’re done!

P.S. I usually triple or quadruple the above recipe and get 2 or 3 waffle irons going and make enough for months. They take up the whole freezer!
